Silicone pans are used in baking and pastry applications for several reasons. When baked in a silicone pan, confections turn out of the pan cleanly, they have well-defined lines and don’t stick to the pan’s surface. Although silicone pans are naturally non-stick, melted fat released by baked goods during cooking collects in the pan, leaving a film. Placing an absorbent, flavor-neutral ingredient between the baked good and the pan before baking effectively prevents a film of grease from forming on the silicone.
Instructions
1 Coat the silicone pan with a thin layer of powdered sugar, if baking a sweet confection.
2 Coat the silicone pan with a thin layer of all-purpose flour, if baking a savory confection.
3 Pour the batter or place the dough in the pan. Bake the confection, according to the recipe.
4 Remove the pan from the oven. Turn the baked goods out onto a wire cooling rack.
5 Wash the silicone pan with mild dish soap and warm water. Allow it to air dry.
